SOHO Serves Up Fresh Georgia Peaches

According to the Georgia Peach Council, each year between mid-May and mid-August Georgia produces over 2.6 million bushels of peaches. As it is the height of peach season, the fruit is taking center stage on SOHO’s menu. A guest favorite so far? Our special peach dessert.

With the fall theater season upon us and the holidays just around the corner, seats at the Cobb Energy Performing Arts Centre are filling up. Whether you plan to catch the Atlanta Ballet performing Moulin Rouge this weekend or the Holiday Ice Spectacular later in the year, we invite you to dine at SOHO before a performance at the Arts Centre. SOHO is offering theater-goers a $28 pre-fixe menu throughout the fall and winter.

Guests enjoying the pre-fixe theater menu can choose one of the following appetizers: House Field Green Salad, Fried Green Tomatos, or Hanger Steak Tacos; and one of the following entrees: Herb Roasted Chicken Breast served with terragon mash potatoes, broccoli and sweet onion jus, Mayhaw BBQ Glazed Scottish Salmon served with roasted fingerling potatoes and sauteed swiss chard, or Beef Short Ribs served with celery-root potato puree, spinach and tomato, and a natural reduction. For dessert, diners can choose to enjoy one of two signature SOHO desserts, the chocolate bread pudding served with vanilla bean ice cream or a Belgian waffle served with almond toffee ice cream. SOHO’s dessert menu offers a number of delectable delights – including the longtime guest favorite chocolate bread pudding, as well as a Belgian waffle topped with almond toffee ice cream.

Recently, we’ve added a few new treats to satisfy a sweet tooth. First, Chef Joe’s Vanilla Bean Crème Brulee. Light and sweet – it is an ideal way to finish a meal. Quick history note – the origins of crème brulee are up for debate. While the name is French (meaning burnt cream), there is no documented history as to who created the first crème brulee or where it was invented. A case can be made for recipes from France, England, and Spain, as the origins of today’s dessert. In any case, I, for one, am glad it’s made its way to SOHO!

 

SOHO has also added Chiffonade’s New York Style Cheesecake to the dessert menu. SOHO’s chefs create a new topping for the cheesecake each day – from warm banana rum sauce to fresh fruit. This decadent dessert pairs perfectly with a cup of coffee or an expresso. Hopefully, you’ll stop in soon for a taste!

 

Finally, don’t forget that Sunday, June 20, is Father’s Day! Why not treat Dad to a lobster dinner? Every Sunday, SOHO offers a $25 lobster meal – guests receive a 1 1/2 lb Maine lobster, Andouille sausage, fresh corn, red bliss potatoes, and a green salad. Spotlight On: Dessert Wines

Wine expert Lars Snavely joined SOHO’s team a few months back and has been enhancing our wine knowledge – and palates – ever since. This week, he’s shared a few insights on dessert wines.

 

Dessert wines are often expensive because producing a dessert wine requires concentrated juice with plenty of natural sugars. The grapes for dessert wine production must be very small. Therefore, more grapes are needed to produce the wines. Birds and weather also make producing dessert wines expensive. Birds love to eat the sweet grapes and, because the grapes have to stay on the vines longer, there’s a chance of killing frosts and too much rain, which causes the grapes to swell. All these factors lead to the higher cost of dessert wines.

 

Despite their expense, almost all wine producing countries produce dessert wines. The most famous, and costly, are from Bordeaux’s Sauternes regions. One very good, and affordable, dessert wine from France is the Chateau Doisy -Vedrines Sauternes. Another region of France well-known for dessert wines is Alsace. The Tribach Vendanges Tardives (or late harvest) wines are well-regarded.

 

California also produces many dessert wines, often using the Black Muscat grape. Robert Mondavi’s 2006 Moscato d’Oro is a good dessert wine from California – it is produced with the Muscat Canelli grape.

Finally, consider a dessert wine from Hungary. In Hungary, the sweetness and quality of the wines are designated as 3, 4, 5 and 6 puttonyos. Puttonyos are the containers the harvested grapes fill as they are being picked. The numbers refer to how many puttonyos it takes to fill a 136 liter barrel. The more it takes - the smaller the grapes, thus the wine is more intense and sweeter. Lars recommends a five-puttonyo wine. Royal Tokaji’s Aszu 5 Puttonyos wine is one good choice.

A Tasty Tart

SOHO sous chef Jeff Haeger can often be found creating tasty treats sure to satisfy a sweet tooth. Recently, his Pistachio Cranberry Tart was added to the SOHO dessert menu – and it’s been earning rave reviews from guests ever since. We hope you’ll stop in the restaurant for a slice soon. And, for readers of this blog who might want to whip up the sweet treat at home – here’s his delicious recipe.

 

PC Tart 

 

Pistachio Cranberry Tart with Caramel, Chocolate Sauce and Vanilla Ice Cream

 

Ingredients (Pistachio Cranberry Tart)

 

1 chocolate tart crust (recipe follows)

6 tablespoons sugar

6 tablespoons light brown sugar

1 tablespoon all purpose flour

3 large egss – lightly beaten

½ cup light corn syrup

1 tablespoon pure vanilla extract

¼ teaspoon salt

½ cup toasted chopped pistachios

¼ cup dried cranberries

Caramel sauce

Chocolate sauce

Vanilla ice cream

 

Ingredients (tart crust)

 

1 ¼ cups all-purpose flour

¾ cup confectioners’ sugar

¼ cup unsweetened cocoa powder

Pinch salt

8 tablespoons (1 stick) cold, unsalted butter (cut into pieces)

1 large egg, lightly beaten

 

Preparation (Tart Crust)

 

Sift the flour, sugar, cocoa and salt into a large bowl. With your fingers, incorporate the butter pieces into the dry ingredients until the mixture resembles coarse crumbs. Mix in the egg to make a soft dough. Flatten the dough into a disk, wrap tightly in plastic wrap, and place in the refrigerator to rest for at least one hour before using.

Love is in the Air: Valentine’s Day at SOHO

Celebrating your love with a cozy dinner for two this Valentine’s Day? You’re invited to SOHO!

 

Valentine's day 

 

In addition to our regular menu, SOHO will offer a special Valentine’s Day menu from Friday, February 12, through Sunday, February 14. The menu will include the following enticing appetizers: Married red and white clam chowders with old bay and butter croutons; Sweet heart grilled shrimp and roasted red pepper pizzette; and a “Two Hearts” salad with romaine, palm, beets, creamy goat’s cheese, spiced pecans and an apple cider vinaigrette.

 

The evening’s entrees will include: Seared diver scallops with forbidden purple sticky rice, coconut curried vegetables, passion fruit and a red wine coulis; Braised veal osso buco with saffron risotto, red chard, a natural reduction and topped with gremolata; and a “For Richer, For Poorer” duo of four ounce lobster tail and monkfish with herbed polenta, asparagus and a tomato hollandaise. For dessert, we’ll serve a Gran Marnier flan with chocolate covered strawberries. Yum!

 

SOHO will serve the Valentine’s dinner menu from 5:30–11:00pm on Friday and Saturday, and from 5:00-10:00pm on Sunday, February 14. We hope you’ll celebrate Valentine’s Day with us! (Reservations can be made here).
