First, SOHO will pour a 2012 Domaine Trimbach Pinot Blanc Reserve from Alsace, France. The winemaker offers the following notes: “Pale green. On the nose, delicate honey and spice notes mixed in with green apple and beeswax. Lovely integrated acidity keeps the flavors fresh and clean.

Next, SOHO will pour a 2013 Domaine de Fontsainte Corbèires Rouge from Languedoc-Roussillon, France. The winemaker describes the red blend: “Nose: Immediate and generous. Notes of fresh red fruits, like cherries, and black fruits, like blueberries. Palate: Delicate tannins with a long finish.”

Finally, SOHO will pour a 2011 Château Haut-Beauséjour Saint-Estèphe from Saint-Estèphe. The winemaker says: “This is a modern, polished wine. Solidly packed with dark tannins and dense fruits. A tough, tannic element shows through strongly, giving counterpoint to the acidity.

SOHO’s executive chef, Scott Warren, and sous chef, Chris Lyons, have created a tapas plate to pair with each wine.

2012 Domaine Trimbach Pinot Blanc Reserve
100% Pinot Blanc
Paired with: Fresh clams, prosciutto, tomato, lemon & herbs, served with grilled baguette.

2013 Domaine de Fontsainte Corbèires Rouge

Paired with: Wagyu beef fritters with sweet figs and charred onion

2011 Château Haut-Beauséjour Saint-Estèphe
60% Merlot, 40% Cabernet Sauvignon
Paired with: Pork Milanese topped with grilled vegetable salsa

Sample each wine in a flight (three three-ounce glasses) for $14.25. Or, pair the flight with a tapas plate for $19. Try a full glass of wine and tapas plate for $13. Of course, the wines and tapas are available individually as well ($9.50/glass and $6.50/tapas). See you soon!

First, SOHO will pour a 2013 Montes Alpha Chardonnay from Casablanca Valley, Chile. The winemaker says of the wine, “Very distinguished golden color. The nose offers outstanding notes of ripe tropical fruits, “golden berries,” bananas, peaches, apricots and grapefruit, along with the asparagus notes that are characteristic of Chardonnay from Casablanca. Its 10 months in contact with French oak also confers elegant notes of toast and vanilla and heightens the lactic notes of butter and toffee. The palate is fresh with pleasing acidity, medium volume, and a long and very pleasing finish.”

Next, SOHO will pour a 2013 Casas del Bosque Carmenere from Rapel Valley, Chile. The winemaker offers the following tasting notes, “Intensely violet in color, on the nose this wine exhibits heady notes of cedar, bacon fat, and graphite with just a hint of fresh lavender. In the mouth, an initial attack of black cherry, sweet tobacco and cinnamon gives way to just a touch of earthiness and ripe bell pepper. Ripe tannins and fresh acidity combine to give good balance and length.”

Finally, SOHO will pour a 2012 Terrazas de los Andes Reserva Malbec from Mendoza, Argentina. The winemaker notes, “The aroma is very expressive, revealing a floral and red fruit profile of violet, raspberry and cherry, with marked aromas of toasted coffee and chocolate. On the palate, the wine is characterized by a broad and sweet mouthfeel and delicate tannins.”

SOHO’s executive chef, Scott Warren, and sous chef, Chris Lyons, have created a tapas plate to pair with each South American wine.

2013 Montes Alpha Chardonnay
100% Chardonnay
Paired with: Lump crab gratin, herbs & citrus

2013 Casas del Bosque Carmenere
100% Carmenere
Paired with: Bacon-wrapped pork tenderloin, mustard shallot vinaigrette

2012 Terrazas del los Andes Reserva Malbec
100% Malbec

First, SOHO will pour a 2009 Decoy Sauvignon Blanc by Duckhorn. The wine is a blend of 79% Sauvignon Blanc and 21% Semillon. Wine & Spirits magazine said of the Decoy Sauvignon Blanc, "As fat and succulent as this wine may be, with ripe pineapple, fresh apple and leesy tannin, the structure keeps it discreet and lasting. It finishes with a gentle touch."

Next, SOHO will pour a 2009 Ramspeck Cabernet Sauvignon. The wine is composed of 78% Cabernet Sauvignon, 7% Merlot, 9% Petit Verdot and 6% Malbec. Blended from small mountainside vineyards that produce concentrated fruit, the Ramspeck Cabernet is a very high-quality wine according to SOHO's wine expert, Lars Snavely.

Finally, SOHO will pour a 2007 Real McCoy Cabernet Sauvignon. The winemaker for the Real McCoy is Robert Mueller whose past experience includes Robert Mondavi and Opus One. The 2007 Cabernet features aromas reminiscent of wild strawberries, blackberries, cherries, and black pepper. On the palate, the wine offers smooth tannins along with hints of vanilla and cinnamon.

SOHO's executive chef, Joe Ahn, has created three tapas plates to pair with each Napa Valley wine. The following will be featured on SOHO's menu until Wednesday, May 25.
