This Flight Night begins on Wednesday, May 5, and the wines and their tapas will be available until Tuesday, May 11
First, SOHO will pour a 2019 William Hill Chardonnay
Aromas of ripe Anjou pear and crème brulee complement layers of ripe peach, golden apple and lemon shortbread on the palate. The velvety mouthfeel is balanced by bright acidity that carries through a fresh ﬁnish with a hint of spice.
The second wine is a 2017 Markham Merlot
The estate vineyards provide the backbone in this Napa Valley blend with Oak Knoll`s Lile Cannon weighing in with a distinct tart cherry character. This showstopper has a lovely balance of candied cherry laced with chocolate aromas. Floral fruit runs from strawberry preserves to boysenberry and is accented with an assortment of baking spices.
Finally, SOHO will pour a 2018 Martin Ray Cabernet Sauvignon
Dark ruby at the center with crimson violet staining tears. The nose opens to black currant, blackberry, crushed bay leaf and shaved chocolate. This vintage has some polish to show oﬀ with dried blueberry, vanilla, and herbal tones, framed by ﬁnely chiseled tannins.
SOHO’s Executive Chef Todd Paige has created a suggested tapa plate to pair with each of the wines:

Markham Merlot, 2017
87% Merlot, 9% Cabernet, 3% Petite Sirah, 1% Malbec
Paired with: Cast Iron-Seared Prime Sirloin, Parmesan Risotto, Red Wine Demi
Martin Ray Cabernet Sauvignon, 2018
Paired with: Filet Bites & Creamy Horseradish Sauce
