On flight night Wednesday, December 16, SOHO will feature guest favorite wine and tapas from 2015. The wine and tapas introduced Wednesday will be available through Tuesday, December 23.

First, SOHO will pour a 2010 Château du Trignon Gigondas from Rhone, France. The winemaker provides the following tasting notes: “A classical Gigondas, that has an overall elegant, yet complex profile, the 2010 Chteau du Trignon (a blend of Grenache, Syrah, Mourvedre, and Cinsault) offers clean, pure aromas of garrigue, wild flowers, black tea, and mineral-laced red and black fruits. Silky and polished on the palate.”

Next, SOHO will pour a 2013 Davis Bynum ‘Jane’s Vineyard’ Russian River Valley Pinot Noir. The tasting profile for the wine is as follows, “The 2013 Jane’s Vineyard Pinot Noir has a beautiful ruby red hue with aromas of cherry, cranberry, tea leaves, dusty oak and baking spices. On the palate, the dark cherries, red plums and vanilla characteristics shine through with balance, acidity and a nice lingering finish. Warm, bright and full of flavor, the Jane’s Pinot Noir is a wonderful amalgam of fruit, spice and earth.”

Finally,  SOHO will pour a 2013 Le Volte dell’Ornellaia. Of the blend the winemaker notes, “The wine appears its classic rich hue, and boasts a bouquet that is generously fruity and subtly spiced. The elegant, silk-smooth tannins are immediately impressive, beautifully complemented by vibrant, refreshing acidity.”

SOHO’s executive chef, Scott Warren, and sous chef, Chris Lyons, have created a tapas plate to pair with each wine.

Paired with: Slow-roasted BBQ baby back ribs with warm Tuscan beans
