SOHO Atlanta restaurant will continue to showcase red varietals, specifically Cabernet Sauvignon, on flight night, Wednesday, January 28. The wines and tapas introduced Wednesday will be available through Tuesday, February 3.
First, SOHO will pour a 2012 Rust en Vrede Estate Vineyards Cabernet Sauvignon from Stellenbosch, South Africa. The winemaker describes the wine, “Aroma: Classic Cabernet character with cassis and lead pencil aromas and notes of mocha. Palate: Offering a firm tannin structure in a tighter style of wine with good phenolic ripeness and a defined finish.”
Next, SOHO will pour a 2013 DAOU Cabernet Sauvignon from Paso Robles, California. The wine is described, “Rich, deep dark berry color with creamy mocha-espresso flavors is the first impression of this wine. The tannins are well-integrated with the fruit and create a long finish. It’s full-bodied with a saturated finish while accompanied by bright acidity and infused by black currant and cooked blueberries fruit.”
Finally, SOHO will pour a 2011 Conn Creek Napa Valley Cabernet Sauvignon. The winemaker says of the wine, “Cherry, currant, plum and pomegranate mingle with toasted pecan, cocoa powder and a light overlay of vanilla. Bright red fruits dominate a lively palate that emphasizes nuance over boldness.”
SOHO’s executive chef, Scott Warren, has created a tapas plate to pair with each Cabernet.
2012 Rust en Vrede Estate Vineyards Cabernet Sauvignon
Paired with: Arrancinni with pancetta and a tomato fennel sauce
2013 DAOU Cabernet Sauvignon
Paired with: Grilled filet medallions, roasted garlic potatoes and a Cabernet demi
2011 Conn Creek Napa Valley Cabernet Sauvignon
Paired with: Bison sliders with bacon and blue cheese
