SOHO Recipe: Steak Tacos

SOHO’s executive chef, Joe Ahn, has helmed the restaurant’s kitchen for more than a decade, continually providing diners with innovative and mouth-watering dishes, including plenty of savory starters. A guest favorite appetizer at SOHO is the steak tacos. For those interested in whipping up this dish at home, here is Chef Joe’s recipe for steak tacos with guacamole and tomatillo sauce.

SOHO Steak Tacos (serves 4)
4 corn or flour tortilla shells
4 oz hanger steak (grilled)
1/2 head lettuce (shredded)
1 tomato (diced)

Wrap shells in foil and warm in 350 degree oven until hot and softened. Top with 1 oz hanger steak. Add lettuce, tomato, guacamole, and tomatillo sauce (plus sour cream if desired).

Guacamole (serves 4)
2 ripe avocados
1/4 onion (minced)
1 serrano chile (remove stem) (minced)
1 tablespoon cilantro (chopped)
1 tablespoon lime juice
Salt and pepper to taste

Cut avocado in half. Remove seed. Scoop from peel and put into mixing bowl. Mash the avocado. Add onion, serrano, cilantro, lime juice, salt and pepper. Mash. (Note: You can add more or less serrano chiles depending on your desired level of hotness).

Tomatillo sauce (serves 4)
10-12 tomatillos (husked and rinsed)
1/4 onion (chopped)
1 serrano chile (remove stem)
2 tablespoon cilantro (chopped)
Salt and pepper to taste
1 whole lime (juiced)

Combine tomatillos, onion and serrano chile in small saucepan. Cover with water and bring to a boil. Cook until tomatillos are tender. Drain. Blend with cilantro, salt, pepper and lime juice until smooth. Enjoy!

French Wines Steal the Spotlight at SOHO

For flight night on Wednesday, July 31, SOHO will feature the phenomenal wines of France. The wines and tapas introduced Wednesday will be available through Tuesday, August 6.

First, SOHO will pour a 2010 Moillard Pouilly-Fuisse Maconnaise from Burgundy, France. The wine is a “pale gold color with mineral and citrus notes. It is opulent and full of flavor.”

Next, SOHO will pour a 2011 Le Grand Bouqueteau Chinon Cuvee from France’s Loire Valley. The winemaker notes, “This Chinon is very perfumed…The tobacco and the dried fruit flavors cut through with intense acidity, breaking out the dry tannic core.”

Finally, SOHO will pour a 2009 Chateau de Parenchere Bourdeaux Superieur from Bordeaux, France. The winemaker says of the wine, “Characterized by a good balance between fruit and tannin, it displays distinct red fruit aromas with a long, sustained finish.”

SOHO’s executive chef, Joe Ahn, has created three tapas plates to pair with each French wine.

100% Chardonnay
Paired with: Green pea arancini stuffed with fresh mozzarella and topped with aioli

2011 Le Grande Bouqueteau Chinon Cuvee
Cabernet Franc
Paired with: Veal scallopini with pearl onions and marsala jus

2009 Chateau de Parenchere Bordeaux Superieur
50% Merlot; 40% Cabernet; 9% Cab Franc; 1% Malbec
Paired with: Country pate, gherkins, dijon and sliced baguette

SOHO Atlanta restaurant will continue to feature the wines and flavors of France and the United States on flight night, Wednesday, July 24. The wines and paired tapas introduced on Wednesday will be available through Tuesday, July 30.

First, SOHO will pour a 2011 Domaine De La Rossignole Sancerre from Loire Valley, France. The winemaker says of the wine: ”Everything you could want in top-notch Sancerre with an added layer of rich white fruit (think poached pears and juicy green apples) that coats the palate before a wave of citrus energy washes over and sets up the taste buds for the next sip. Aromas of wildflowers and firecrackers are a nod to this third-generation Sancerre family’s outstanding terroir; the finish reminds of fresh sea breezes, lime sorbet and an endless summer.”

Next, SOHO will pour a 2012 Cliff Lede Sauvignon Blanc from Napa Valley, California. This wine is meant to be compared to the Sancerre, so guests can enjoy the Sauvignon Blanc varietal in the old style (French) and new style (California). The Cliff Lede Sauvignon Blanc offers: “Enticing aromas of white peach, cantaloupe, and orange blossom complemented by bright, citrus notes of lemon curd and zest. Tropical flavors of pineapple and carambola introduce a rich and concentrated palate that finishes with persistent minerality.”

SOHO will also pour a 2011 Grand Veneur Cotes du Rhone from Rhone Valley, France. The winemaker describes the wine: “Purple-tinged garnet color. Aromas of fresh berries (wild raspberry, blackcurrant, blackberry) and spices. The palate is full-flavored, with silky smooth tannins. The finish offers notes of licorice and pepper.”

Finally, SOHO will pour a 2010 Alexandria Nicole Quarry Butte from Horse Heaven Hills, Washington. The winemaker says of the wine: “It’s beautiful bouquet is loaded with an alluring, aromatic mix of black currants, vanilla, peppercorn, and cocoa. The palate is ripe with blackberry, cherry, rich and supple tannins, hints of cedar and elegant oak-spice that lead to a balanced structure and lengthy finish.”

100% Sauvignon Blanc

2012 Cliff Lede Sauvignon Blanc
92% Sauvignon Blanc, 6% Semillon, 2% Sauvignon Vert
Paired with: Conch fritters and mango chutney

2011 Grand Veneur Cotes du Rhone
70% Grenache, 20% Syrah, 10% Cinsault
Paired with: Short rib ravioli with port wine jus

2010 Alexandria Nicole Quarry Butte
57% Cabernet, 16% Merlot, 12% Syrah, 9% Malbec, 4% Cabernet Franc, 2% Petit Verdot
Paired with: Elk carpaccio, thatched potatoes and aioli

SOHO Atlanta restaurant will feature wines from the United States and France on flight night Wednesday, July 17. The wines and paired tapas introduced on Wednesday will be available through Tuesday, July 23.

First, SOHO will pour a 2010 Marimar Estate“Acero” Don Miguel Vineyard Chardonnay from Russian River, California. The winemaker describes the wine: ”Attractive bright fruit, fresh and lively, with notes of lemon cream, white peach and ginger. Crisp and vibrant in the mid palate, it shows great balance, full flavors and a dry, long finish.”

Next, SOHO will pour a 2009 Chateau De La Chaize Brouilly from Beaujolais, France. The wine is described as: “Light ruby with purple tones, with aromas of fresh strawberries and raspberries. The palate has silky red fruits balanced by lively acidity.

Finally, SOHO will pour a 2007 Clarendelle Rouge from Bordeaux, France. The winemaker says the wine is “dark, attractive, brilliant garnet red color. It starts off very fresh on the palate, with delicious blackcurrant and blackberry flavors. The taste profile is beautifully soft and subtle, with smooth tannins.”

SOHO’s executive chef Joe Ahn has created three tapas plates to pair with each wine.

Paired with: Poached Carolina flounder, citrus, and leek fondue

2009 Chateau De La Chaize Brouilly
100% Gamay
Paired with: Pulled BBQ chicken sliders, bread and butter pickles

2007 Clarendelle Rouge
57% Merlot; 33% Cabernet; 10% Cabernet Franc
Paired with: Slow roasted ginger-soy spare ribs

SOHO Serves Up Fresh Georgia Peaches

According to the Georgia Peach Council, each year between mid-May and mid-August Georgia produces over 2.6 million bushels of peaches. As it is the height of peach season, the fruit is taking center stage on SOHO’s menu. A guest favorite so far? Our special peach dessert.

SOHO Atlanta Restaurant will showcase the wines and flavors of France and the United States on flight night, Wednesday, July 3. Guests can enjoy the wines and tapas introduced during Wednesday’s flight night through Tuesday, July 16.

First, SOHO will pour a 2010 Domaine Laroche Chablis Saint Martin from Burgundy, France. A review from International Wine Cellar describes the wine: “Pale, bright yellow. Dusty stone, lemon drop and wild herbs on the nose.  At once rich and penetrating, with strong acidity and mineral spine intensifying the flavors of grapefruit, lemon drop and wild herbs.  Classic steely Chablis with very good grip.”

Next, SOHO will pour a 2011 Joel Gott Alakai Red Blend from Monterey, California. The winemaker says of the wine: “It has aromas of wild cherry and raspberry, with spicy notes of white pepper and anise. On the palate, the wine has complexity and elegance, rounded out by ripe fruit flavors and smooth tannins.”

Finally, SOHO will pour a 2011 Cloudline Pinot Noir from Willamette Valley, Oregon. The winemaker gives these tasting notes: “The wine has bright, fresh character, lovely mouth feel, and the unmistakable elegance that we love in Pinot Noir. On the palate, there is a delicious array of red and black fruits, framed by very good structure. True to Cloudline and the vintage, the 2011 Pinot Noir brings a classic sensibility to new world fruit.”

Paired with: Grilled Argentine red shrimp and peaches with saba and extra virgin olive oil

Paired with: Seared mini bone-in filet with shiitake mushroom jus

2011 Cloudline Pinot Noir
100% Pinot Noir
Paired with: Hot smoked salmon with sliced avocado and raspberry coulis
