Cabernet Sauvignon Takes Center Stage at SOHO

For the final flight night of February on Wednesday, February 23, SOHO Atlanta will continue to showcase wines made in both old and new world styles. This week's featured varietal is Cabernet Sauvignon.

First, SOHO will pour a 2007 Chateau de Parenchere Bordeaux Superieur Red from Bordeaux, France. This old-world style wine is a blend of 50% Cabernet Sauvignon, 43% Merlot, 6% Cabernet Franc, and 1% Malbec. Produced from vines aged 20 years on average, this blend has red fruit aromas and, on the palate, a good balance between fruit and tannin.

Next, SOHO will pour a 2007 Souverain Cabernet Sauvignon from Alexander Valley, California. This new-world style wine is 100% Cabernet Sauvignon. The wine offers aromas of blackberry, black cherry, chocolate, cedar and baking spices. On the palate, there are flavors of chocolate, cloves, ginger, cigar box and lavender.

Finally, SOHO will pour a 2006 Conn Creek Cabernet Sauvignon from Napa Valley, California. This new-world style wine is a blend of 82% Cabernet Sauvignon, 8% Syrah, 5% Cabernet Franc, 3% Merlot, 1% Malbec and 1% Petit Verdot. The winemaker, Mike McGrath, says of the blend, "The nose begins with rich, dark fruit and subtle hints of chocolate and toasted oak. Dark, luscious cherry and plum flavors come alive on the palate and meld with notes of spice, chocolate and licorice."

SOHO's executive chef, Joe Ahn, has created three tapas plates to pair with each Cabernet Sauvignon. The following will be featured on SOHO's menu until Wednesday, March 2.

2007 Chateau de Parenchere Bordeaux Superieur Red, Bordeaux, France
50% Cabernet Sauvignon, 43% Merlot, 6% Cabernet Franc, 1% Malbec
Paired with: Carmelized onion phyllo tart, aged blue cheese and fresh herbs

2007 Souverain Cabernet Sauvignon, Alexander Valley, California
100% Cabernet Sauvignon
Paired with: Chocolate scented turkey mole over Spanish rice

2006 Conn Creek Cabernet Sauvignon, Napa Valley, California
82% Cabernet Sauvignon, 8% Syrah, 5% Cabernet Franc, 3% Merlot, 1% Malbec, 1% Petit Verdot
Paired with: Pistachio-panko encrusted goat's cheese with blackberry syrup

Savor Malbec at SOHO This Week

SOHO Atlanta continues to spotlight wines made in both old and new world styles on flight night, Wednesday, February 16. This week's featured varietal is Malbec.

First, SOHO will pour a 2007 Cuvelier Los Andes "Coleccion" from Mendoza, Argentina. This new-world style Malbec is a blend of 60% Malbec, 26% Cabernet, 10% Merlot, and 4% Petit Verdot. The wine received 91 points from Wine Advocate. The wine advocate review notes, "on the nose the wine offers cedar, cinnamon, violets, black cherry, and black currant. Full-bodied, smooth-textured, and plush on the palate, it has layers of savory fruit, some underlying tannin, and excellent balance."

Next, SOHO will pour a 2008 Dona Paula Estate Malbec from Mendoza, Argentina. This new-world wine is 100% Malbec. According to Wine Advoacate, this Malbec is plush on the palate with layered black cherry and blueberry flavors.

Finally, SOHO will pour a 2008 Clos La Coutale from Cahors, France. This old-world style wine is a blend of 80% Malbec and 20% Merlot. On the palate the wine offers red and dark fruit flavors with a touch of spice.

SOHO's executive chef Joe Ahn has prepared three tapas plates to complement each Malbec. The following will be featured on SOHO's menu until Wednesday, February 23.

Paired with: Grilled, smoked skirt steak, yucca fries, and chimmi churri

2008 Dona Paula Estate Malbec, Mendoza, Argentina
100% Malbec
Paired with: Tandoori spiced chicken, yogurt sauce, and naan bread

2008 Clos La Coutale, Cahors, France
80% Malbec, 20% Merlot
Paired with: Chicken liver and mushroom pate, fig and port wine compote

SOHO Flight Night Features Merlot

SOHO Atlanta continues to showcase wine produced in both old and new world styles on flight night, Wednesday, February 9. This week's varietal is Merlot.

First, SOHO will pour a 2006 Clos De L'Eglise from Lalande de Pomeral, France. This old-world style wine is a blend of 80% Merlot, 10% Cabernet and 10% Cabernet Franc. On the palate the wine is smooth and well-balanced and offers flavors of jammy black and red fruits. There are spicy notes on the finish – pepper, cinnamon, vanilla, and a hint of liquorice.

Next, SOHO will pour a 2008 House of Independent Producers Merlot from Columbia Valley, Washington. This new world-style wine is 100% Merlot. On the palate, the wine has flavors of dark berry fruit and hints of cocoa, herbs and earth.

Finally, SOHO will pour a 2007 Falesco Merlot from Umbria, Italy. This old-world style wine is 100% Merlot. The wine received 88 points from The Wine Advocate. The Wine Adocate review notes the Falesco Merlot "possesses notable depth and inner sweetness, with waves of dark fruit, chocolate, spices and French oak that flow from its full-bodied, richly-textured frame."

2006 Clos De L'Eglise, Lalande de Pomeral, France
80% Merlot, 10% Cabernet, 10% Cabernet Franc
Paired with: Braised beef bourguignon with an herbed puff pastry

2008 House of Independent Producers Merlot, Columbia Valley, Washington
100% Merlot
Paired with: Veal sliders with goat's cheese and tobacco onions

2007 Falesco Merlot, Umbria, Italy
100% Merlot
Paired with: Braised lamb shepherd's pie

SOHO Spotlights Cabernet Franc

This February, SOHO will spotlight varietals made in both old and new world styles. The tasting tour begins on flight night, Wednesday, February 2, with Cabernet Franc.

First, SOHO will pour a 2009 Wines of Substance Cabernet Franc from Walla, Walla, Washington. This old-world style Cabernet Franc has aromas of black fruit, rosemary and thyme. The wine also features flavors of earth and herbs on the palate.

Next, SOHO will pour a 2007 Steele Cabernet Franc from Lake County, California. The new-world style Steele Cabernet Franc offers plenty of fruit on the palate, as well as medium tannins and a long finish.

Finally, SOHO will pour a 2005 Bodega del Desierto Cabernet Franc from La Pampa, Argentina. The new-world style Bodega del Desierto Cabernet Franc offers spicy and sweet red pepper notes on the nose. On the palate the wine is well-balanced with red fruit flavors.

SOHO's Executive Chef, Joe Ahn, has created three tapas plates to pair with each glass of Cabernet Franc. The following will be featured on SOHO's menu until Wednesday, February 9.

2009 Wines of Substance Cabernet Franc, Walla, Walla, Washington
100% Cabernet Franc
Paired with: Cinnamon duck leg confit with a mushroom puffed pastry

2007 Steele Cabernet Franc, Lake County, California
100% Cabernet Franc
Paired with: Smoked pork loin, apple chutney and sweet potato chips

2005 Bodega del Desierto Cabernet Franc 25/5, La Pampa, Argentina
100% Cabernet Franc
Paired with: Grilled lollipop lambchops and hummus
