Throughout the month of December, SOHO will spotlight the wines and flavors of Italy. The journey begins on flight night, Wednesday, December 1.

Sangimignano0001 Vineyards of San Gigmanano, Italy

First, SOHO will pour a 2008 Cesani Vernaccia di San Gimignano from Tuscany, Italy. The wine offers fresh aromas of white flowers and pear. On the palate the Vernaccia di San Gimignano has flavors of white pear and green apple complemented by hints of white pepper.

Next, SOHO will pour a 2007 Castello di Fonterutoli "Badiola" Toscana Rosso from Tuscany, Italy. The Badiola is a blend of Sangiovese and Merlot and is produced in high altitude vineyards. A well-balanced wine, it has a smooth finish. The 2007 "Badiola" received 87 points from Robert Parker's Wine Advocate.

Finally, SOHO will pour a 2006 Torcicoda Primitivo Salento from Puglia, Italy. Wine Spectator noted the wine has aromas and flavors of sweet plums, with hints of fresh herbs and vanilla. The 2006 Primitivo Salento is medium-bodied, round, and fruity with a clean mineral finish.

Inspired by the flavors of Italy, SOHO's Chef Joe has created three tapas dishes to complement each wine. The following will be available until Wednesday, December 8.

100% Vernaccia di San Gimignano
Steamed littleneck clams, white wine caper sauce and grilled bread

2007 Castello di Fonterutoli "Badiola", Tuscany, Italy

butternut squash, green market, recipe, SOHO

On Saturday, November 20, SOHO's sous chef Jeff Haeger was the featured chef at the Green Market for Piedmont Park.

Post-thanksgiving-pic-1

Butternut squash was Jeff's main ingredient as he shared recipes and tips with the audience. The Butternut Squash Gnocchi Jeff whipped up on Saturday is an ideal dish for the upcoming Thanksgiving holiday – or for any gathering this fall and winter. Below is his recipe:

Butternut Squash Gnocchi
Ingredients
1.25 lbs roasted butternut squash, pureed smooth

6 ounces all-purpose flour
Salt and Pepper
Extra virgin olive oil

Directions
Ensure workspace is well-floured before beginning. Work the flour into the squash a half cup at a time, folding with your hands. Let dough rest. (Chef's note: You may have to add additional flour to the dough to compensate for amount of water in the squash. Each squash is different). Once the dough is able to hold a "rope" shape, 3/4 inches in diameter, it is ready. Cut dough into individual gnocchi 1/2inch to 3/4 inch in size. Working in batches, place the gnocchi into boiling salted water for 3 minutes or until the gnocchi float. Drain and toss with extra virgin olive oil. Enjoy!

SOHO is serving up two new pasta dishes sure to delight diner's palates.

IMG_1772

First, we've added an Apple and Sausage Ravioli that has been earning rave reviews from guests. The dish features eight raviolis topped with browned butter cream. The raviolis are garnished with crisped sausage, sage, and an apple cider drizzle. The pasta is filling without being too heavy and has a nice balance of sweet and spicy flavors. Interested in pairing the pasta with a glass of wine? SOHO's resident wine expert, Lars Snavley, recommends pairing the dish with the Rosenblum Zinfandel offered on SOHO's wine list.

SOHO has also add a new vegetarian entree to the menu. The plate is sure to satisfy all diners – vegetarian or not. The dish features edamame ravioli tossed with shiitake mushrooms and snow peas in a coconut curry cream sauce. Trust me when I say the edamame ravioli, a traditional ravioli stuffed with edamame paste, is not to be missed!

We hope you stopped in soon and try the latest offerings from SOHO's kitchen.

SOHO will continue to showcase the wines and flavors of Australia and New Zealand on flight night Wednesday, November 17, and Wednesday, November 24.

First, SOHO will pour a 2009 Three Stones Sauvignon Blanc from Marlborough, New Zealand. The Three Stones vineyards combine Marlborough's cool climate with free draining stony soils to produced balanced wine. The 2009 Sauvignon Blanc has flavors of gooseberry and kiwi, as well as a fresh acidity.

Next, SOHO will pour a 2007 Mitolo "Jester" Cabernet Sauvignon from McLaren Vale, Australia. One unique technique Mitolo uses in producing the "Jester" Cabernet Sauvignon is drying twenty percent of the grapes on racks in the traditional Amarone manner. This technique yields less juice but a more rich, complex and full-bodied wine.

Finally, SOHO will pour a 2008 Craggy Range Gimblett Gravels "Te Kahu" Bordeaux Blend from Hawke's Bay, New Zealand. The 2008 "Te Kahu" is a blend of Merlot, Cabernet Sauvignon, Malbec and Cabernet Franc. The Wine Advocate awarded the "Te Kahu" 92 points and noted, "The palate is tannic and very well defined, a captivating symmetry here with an irresistible velvety finish that lingers long after the wine has bid adieu."

Inspired by Australia and New Zealand, SOHO's executive chef, Joe Ahn, has prepared three tapas plates to pair with the wines. The following will be featured on SOHO's menu until Wednesday, December 1.

2009 Three Stones Sauvignon Blanc, Marlborough, New Zealand
100% Sauvignon Blanc
Shrimp and bay scallop ceviche with crisped plantains

2007 Mitolo "Jester" Cabernet Sauvignon, McLaren Vale, Australia
100% Cabernet Sauvignon

77% Merlot, 11% Cabernet Sauvignon, 6% Malbec and 6% Cabernet Franc

SOHO's extensive appetizer menu is filled with delicious choices – from Chef Joe's signature calamari to the Kobe beef carpaccio. Gluten-free guests may love the farm-raised organic Prince Edward Island mussels or the hanger steak tacos on corn torillas. Whether or not your diet is gluten-free, the hanger steak tacos are not to be missed – the dish has recently returned to SOHO's menu after a brief hiatus. We hope you'll visit the restaurant soon and try one of SOHO's savory starters.

For those who are interested in creating one of Chef Joe's appetizers at home, here is his recipe for hanger steak tacos with homemade guacamole and tomatillo sauce.

SOHO Steak Tacos (serves 4)
4 corn or flour tortilla shells
4 oz hanger steak (grilled)
1/2 head lettuce (shredded)
1 tomato (diced)

Wrap shells in foil and warm in 350 degree oven until hot and softened. Top with 1 oz hanger steak. Add lettuce, tomato, guacamole, sour cream and tomatillo sauce.
