With the fall theater season upon us and the holidays just around the corner, seats at the Cobb Energy Performing Arts Centre are filling up. Whether you plan to catch the Atlanta Ballet performing Moulin Rouge this weekend or the Holiday Ice Spectacular later in the year, we invite you to dine at SOHO before a performance at the Arts Centre. SOHO is offering theater-goers a $28 pre-fixe menu throughout the fall and winter.

Guests enjoying the pre-fixe theater menu can choose one of the following appetizers: House Field Green Salad, Fried Green Tomatos, or Hanger Steak Tacos; and one of the following entrees: Herb Roasted Chicken Breast served with terragon mash potatoes, broccoli and sweet onion jus, Mayhaw BBQ Glazed Scottish Salmon served with roasted fingerling potatoes and sauteed swiss chard, or Beef Short Ribs served with celery-root potato puree, spinach and tomato, and a natural reduction. For dessert, diners can choose to enjoy one of two signature SOHO desserts, the chocolate bread pudding served with vanilla bean ice cream or a Belgian waffle served with almond toffee ice cream. SOHO and executive Chef Joe Ahn will serve up three innovative tapas dishes paired with exceptional wines on flight night, Wednesday, October 27. For the final week of October, Chef Joe has prepared three mouth-watering beef tapas plates. Lars Snavely, SOHO's resident wine expert, has chosen wines from around the world to complement each dish. The following will be featured on SOHO's menu until Wednesday, November 3.

2267_CT07  Frescobaldi Tenuta di Castiglioni vineyards

First, SOHO will serve a beef tartar with capers, crisped asiago cheese, and a "sunny side up" quail egg. The tartar will be paired with a 2008 Bodegas Olivares Altos de La Hoya from Jumilla, Spain. This wine is a blend of 92% Mourvedre, or Monastrell as it is know in Spain, and 8% Grenache. The vines used in Jumilla are among the oldest in the world.

Next, SOHO will serve a pot pie of braised beef, potatoes and vegetables in a Chianti jus. The pot pie will be served with a 2008 Zenato Valpolicella Classico from Verona, Italy. The Valpolicella Classico is a blend of Corvina, Rondinella and Sangiovese. It is dry, robust and velvety on the palate.

Finally, SOHO will offer grilled skirt steak and avocado tacos, served with creamy chipotle sauce and nopales. The dish will be paired with a 2008 Frescobaldi Tenuta di Castiglioni from Tuscany, Italy. The Tenuta di Castiglioni is a blend of Cabernet Sauvignon, Merlot, Cabernet Franc and Sangiovese. The wine offers warmth, velvet smoothness and complex balance on the palate.

SOHO and executive chef Joe Ahn will serve up three innovative tapas plates for flight night on Wednesday, October 20. this week, Chef Joe has prepared duck three different ways for flight night. SOHO's resident wine expert, Lars Snavely, has paired each duck tapas with a wine sure to complement the flavors of the plate. The following will be featured on SOHO's menu through Wednesday, October 27.

First, SOHO will serve a duck leg confit with grilled poached pears and a pomegranate gastrique. The dish will be paired with a Sebastiani Pinot Noir from the Sonoma Coast of California. Grapes for this Pinot Noir are grown on the Sonoma Coast. The morning fog and ocean breezes of the area produce fruit that has wonderful color and flavor, according to Lars.

Next, SOHO will serve southern-style pulled duck BBQ sliders with a side of Granny Smith coleslaw. The sliders will be paired with a NV St. Cosme "Little James" Basket Press from Rhone, France. The wine is 100% Grenache and is deep and fruity on the palate.

Finally, SOHO will serve grilled Magret breast with butternut squash gnocchi and a dark cherry jus. The duck will be paired with a 2006 Muga Reserva from Rioja, Spain. The wine is a blend of Tempranillo, Grenache, Mazuelo and Graciano. The Muga Reserva offers aromas of red-berry fruit and toasted oak. On the palate, the wine is supple and balanced.

SOHO has recently added a number of delectable dishes to the dinner menu – meaning deciding what to eat when you visit just became more difficult. Here's a quick rundown of what's new:

SOHO latest appetizer offering is a PATAK's sausage sampler, featuring two sausages selected by executive chef Joe Ahn and rotated frequently, braised purple cabbage, grainy mustard, and artisan bread. SOHO is also serving a Tempura Shrimp appetizer. The shrimp, which are battered and fried, will be served with a marinated seaweed salad and wasabi-avocado vinaigrette.

In addition to long-time menu favorites such as blackened wild grouper and beef bolognese, SOHO is now offering a North Atlantic Cod entree. The panko encrusted day boat cod will be served with green lentil risotto, snow peas, and a lemon-dill buerre blanc.

SOHO has also added a Scottish Salmon entree to the dinner menu. The salmon will be glazed with Mayhaw BBQ sauce and served with roasted fingerling potatoes and sauteed swiss chard. Finally, for those who love great cuts of meat, SOHO has added "1855" Beef Tenderloin to the dinner menu. The tenderloin will be served with horseradish mash potatoes, asparagus, fried onion and a natural reduction.

SOHO and executive chef Joe Ahn continue to please the palate with new tapas and wine pairings. This week for flight night on Wednesday, October 13, chef Joe has prepared a pork dish in three different ways. SOHO's wine expert, Lars Snavely, has paired each pork tapas plate with an exceptional glass of wine. The following will be featured on SOHO's menu until Wednesday, October 20.

First, SOHO will serve a tapas plate of slow roasted pork shoulder and apple barbeque sauce in a cornmeal crepe. The crepe will be paired with a 2007 Murphy Goode "Liar's Dice" Zinfandel from Sonoma County, California.

Next, SOHO will serve white wine braised pork belly lettuce wraps with a fresh tomato jam. The wraps will be paired with a 2008 Spellbound Petite Sirah from Lodi, California.

Finally, SOHO will serve a tapas plate of petite pork "filet mignon" with grilled mushrooms and a smoked tomato jus. The dish will be paired with a 2006 "Fuse" from Napa Valley, California. The wine is a blend of 75% Cabernet Sauvignon and 25% Syrah.

Fall Favorites at SOHO

Cooler temperatures and changing leaves mean the return of butternut squash soup to SOHO's menu. The silky soup, made with the freshest squash available, is a fall favorite. The perfect way to start a meal, butternut squash soup is available every day at SOHO. We hope you'll stop in soon and enjoy a bowl. If you're in the mood to whip up the soup at home, here is Chef Joe's recipe:

Butternut Squash Soup (serves 4)
Ingredients
2 average-size butternut squash (peeled, chopped and seeded)

1 medium onion (peeled and chopped)
1 cup heavy cream
Salt and pepper

Preparation
Place squash and onion in medium size pan. Add enough water to cover squash and onion. Add salt and pepper to taste. Cook until squash is soft. Add heavy cream to pan and bring to a boil. Transfer pan's contents to blender. Carefully blend until smooth. Season with salt and pepper to taste.

In addition to the butternut squash soup, SOHO has also added a new cocktail to the menu. The Pomegranate and Cranberry Bellini is sure to warm you up this fall and winter. Here's the recipe SOHO will be using to create this oh-so-sippable cocktail.

Pomegranate and Cranberry Bellini
Ingredients

1 cup ice

1 cup simple syrup
1 1/4 cups Pomegranate juice
1 cup Cranberry juice
750 ml Proseccco
1 thinly sliced lime
1 bunch of fresh mint for garnish
1/2 cup of pomegranate seeds for garnish

Preparation
Place ice in a 6 to 8 cup pitcher. Add simple syrup, pomegranate and cranberry juice. Stir well. Slowly pour in prosecco. Divide seeds between 12 champagne flutes. Pour mixture. Garnish each glass with a lime slice and mint sprig.

A New Twist on Tapas

During the month of October, SOHO is putting a fresh twist on our weekly featured wine and tapas pairings. Every week in October, executive chef Joe Ahn will prepare one tapas plate three different ways. SOHO's resident wine expert, Lars Snavely, after tasting each plate, searched far and wide to find the wines that complement each dish best. We invite you to try each combination – or mix everything up to find your favorite wine and tapas pairing. For the first week in October, the featured tapas plate is chicken. The following will be featured on SOHO's menu until Wednesday, October 13.

First, SOHO will offer a Chicken Milanese served with fresh grape tomato and mozzarella salad and roasted lemon. Lars has selected a 2008 Argiolas Costamolino from Sardinia, Italy, to pair with this traditional Italian dish. The Argiolas Costamolino is 90% Vermentino and 10% native Sardinian grapes. On the palate the wine offers pleasant delicacy and crispness.

Next, SOHO will plate Port Wine Chicken and Foie Gras Pate with fig compote. Lars has selected a 2007 Tenuta Sant'Antonio “Monti Garbi” Valpolicella from Verona, Italy, to pair with this dish. The "Monti Garbi" is dry and flavorful, and will balance nicely with the richness of Chef Joe's chicken and foie gras tapas.

Finally, SOHO will serve a marinated chicken with chorizo and apple kabobs and shaved manchego. Lars has chosen a 2008 Elke Vineyard Blue Diamond Pinot Noir from Anderson Valley, California, to complement this dish. The Blue Diamond Pinot Noir is Elke Vineyard's top-of-the-line wine. Only 700 to 800 cases of the Pinot Noir are produced each year.
